Shan Lin Xi High Mountain Oolong

 

Shan Lin Xi High Mountain Oolong is originated from the mountain range of Shan Lin Xi near the junction of three counties, namely Chiayi, Nantou and Yunlin.  At an altitude of 1700 metres, the weather there is always foggy and misty, with short duration of daily sunshine.  The area has very good quality water source and fertile soil.  As a result, the tea leaves of the tea plants there are thick and soft, containing high level of carbohydrates and amino acid which are the main sources of sweetness and freshness of the tea.  On the contrary, the polyphenol content is low which is the main cause of astringency.

 

Shan Lin Xi High Mountain Oolong was produced through a traditional Taiwan Oolong tea making procedure such as manually plucking the leaves and later rolling and pressing them for further processing.  The result is semi-spherical beads of tea leaves, radiating an alluring aroma of high mountain Oolong.  After steeping, the tea displays a golden yellow tinge, crystal clear and has a subtle floral fragrance that is fresh and enticing. When sipped, the tea carries loads of umami, sweet, grassy, floral and a little bit astringent.  It relaxes the mind and the body.  After all, it is a tea for subtle tastes, enjoyment and relaxation of the body and mind.

Brewing Notes

  • Preparation Steep:  Use 5 grams (about 1 tablespoon) of tea leaves for 1 person.  Pour hot water (100°C) to cover the tea leaves and filter away the water immediately. This prepares the tea for subsequent steeping.
  • First Steep:  Use 200ml of hot water (95-100°C) to steep the tea for 1.5 to 2 minutes.  Filter the tea and enjoy.
  • Subsequent Steep:  Again use hot water (~95°C) and steep 15 seconds longer.
